I have some serious issues with pork,* so if we eat hotdogs or sausage, it’s probably turkey. This weekend I made my own turkey sausage based on a Rachael Ray recipe.
1 1/2 lbs ground turkey (not turkey breast)
2 teaspoons fennel seed
1 1/2 teaspoons red pepper flakes
3 cloves garlic, minced
1 Tablespoon Italian Seasoning
salt and pepper
Mix together and then divide into patties about 1/2 thick. Cook in hot skillet with about a teaspoon of olive oil** until browned.
*There is traumatic childhood story involving Charlotte’s Web, enough said.
**In a non-stick skillet, they should stick, but turkey is so lean that if you want it to brown, you will have to add some oil.
